Step-by-Step
  1. Heat the oven to 400°F (205°C). Lightly oil a baking dish or line a sheet pan with parchment, then pat the pork chops dry with paper towels.
  2. Stir together the olive oil, minced garlic, kosher salt, black pepper, and dried herbs. Add paprika if desired, then rub the mixture evenly over both sides of every pork chop.
  3. Let the seasoned chops stand for 10 to 15 minutes before roasting so the flavors can settle into the surface of the meat.
  4. Arrange the chops in a single layer with space between them. Roast for about 18 to 20 minutes for thinner chops or 22 to 25 minutes for thicker chops and bone-in cuts.
  5. Check the thickest part with an instant-read thermometer. Remove the pork from the oven when it reaches 145°F (63°C), then rest for 3 to 5 minutes.
  6. Garnish with chopped fresh parsley and serve immediately with potatoes, vegetables, applesauce, or a simple pan sauce made from the roasting juices.

Notes

Use an instant-read thermometer instead of relying only on the clock because pork chops can dry out quickly when overcooked. Fresh minced garlic gives the strongest flavor; mixing it with the oil helps prevent exposed garlic from burning. For especially thick chops, briefly sear them in a hot skillet before roasting to improve browning and reduce oven time.
