- Wipe or quickly rinse the mushrooms, then dry them thoroughly. Trim the stems, leave small mushrooms whole or halve them, and quarter any larger mushrooms.
- Heat the olive oil in a large skillet over medium-high to high heat. Add the mushrooms in a single layer and cook for about 5 to 8 minutes, stirring occasionally, until they release their moisture and begin to brown.
- Add the butter and cook for 1 to 2 minutes, until it melts and becomes foamy around the mushrooms.
- Add the minced garlic, kosher salt, and black pepper. Cook for about 1 to 2 minutes, stirring constantly, until the garlic is fragrant without allowing it to brown heavily.
- Stir in the chopped parsley. If using dry white wine, add it after the garlic and simmer for 2 to 3 minutes until reduced.
- Taste the mushrooms and adjust the salt, pepper, or lemon juice as desired. Serve immediately while the butter sauce is warm and glossy.
Notes
For the richest result, use 4 tablespoons of butter; for a lighter version, use 2 tablespoons. Dry mushrooms well and avoid crowding the skillet so they brown instead of steam. Refrigerate leftovers in a covered container and reheat gently in a skillet.
