- Line an 8-inch square pan with parchment paper, leaving enough overhang to lift out the chilled candy.
- Cut larger gumdrops into halves or quarters. Lightly butter or oil the knife to reduce sticking.
- Melt the butter and white chocolate chips together in a saucepan over low heat, stirring frequently, or microwave in 20- to 30-second intervals, stirring after each interval.
- Remove the smooth mixture from the heat. Quickly fold in the mini marshmallows and chopped gumdrops, keeping the marshmallows visibly intact.
- Transfer the mixture to the prepared pan and press it into an even layer with lightly buttered parchment or greased hands.
- Refrigerate for about 2 hours, or until firm. Lift the candy from the pan using the parchment overhang and cut into small squares.
Notes
Use ordinary soft gumdrops rather than very hard or heavily sugar-coated candies. Keep the heat low and remove the white-chocolate mixture before adding the marshmallows so the candy does not become greasy, grainy, or too soft.
