Ingredients

Main Ingredients
  • 2-3 lb Boneless, skinless chicken breasts
  • 1 1 oz packet (28 g) Ranch seasoning mix
  • 1 1 oz packet (28 g) Au jus gravy mix
  • 1/2 cup (1 stick/113 g) Unsalted butter, cut into pieces
  • 1/2-3/4 cup Sliced jarred pepperoncini peppers
  • 1/4 cup Pepperoncini juice from the jar

Method

Step-by-Step
  1. Place the chicken breasts in the bottom of a slow cooker in a mostly even layer.
  2. Sprinkle the ranch seasoning mix and au jus gravy mix evenly over the chicken.
  3. Arrange the butter pieces and sliced pepperoncini over the chicken, then pour in 1/4 cup pepperoncini juice. No additional water or broth is usually needed.
  4. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until the chicken is tender and reaches at least 165°F (74°C) internally.
  5. Shred the chicken with two forks directly in the slow cooker, stir it into the buttery juices, and let it rest in the sauce for about 5 minutes before serving.

Notes

Start with 1/4 cup pepperoncini juice because the seasoning packets and peppers can be salty. Similarly sized chicken breasts cook more evenly, while chicken thighs also work and tend to stay especially moist.
