Step-by-Step
- Let the cream cheese soften at room temperature and cut it into cubes. Shred the cheddar from a block so it melts more smoothly than pre-shredded cheese.
- Pour the beer into a saucepan and warm it over medium-low heat. Keep the beer below a simmer and do not let it boil.
- Add the cream cheese cubes to the warm beer. Stir gently until the cream cheese is smooth and fully incorporated.
- Add the shredded cheddar gradually, stirring constantly after each addition until melted before adding more.
- Stir in the Worcestershire sauce, mustard, garlic powder, paprika, and optional cayenne pepper. Continue cooking gently for 2 to 4 minutes until smooth and creamy.
- Taste the beer cheese and season with salt and black pepper. Serve immediately while warm with pretzels, crackers, bread, vegetables, burgers, or fries.
Notes
Use a mild-to-medium beer such as lager, pilsner, amber ale, pale ale, or wheat beer. Avoid boiling the mixture, add cheddar gradually, and serve immediately for the smoothest texture.
