  1. Heat the oven to 350°F and grease a 9 x 13-inch baking dish for a thinner casserole, or use a greased 2-quart or 8 x 8-inch dish for a thicker casserole.
  2. Drain the whole-kernel corn well, but do not drain the cream-style corn. Lightly beat the eggs and allow the melted butter to cool briefly so it is warm rather than very hot.
  3. Add the Jiffy mix, drained whole-kernel corn, undrained cream-style corn, sour cream, melted butter, and beaten eggs to a large mixing bowl.
  4. Stir just until all the ingredients are evenly combined. Do not vigorously beat or overmix the batter, since a gentle stir helps keep the finished casserole tender.
  5. Pour the mixture into the prepared baking dish and spread it level with a spatula. Bake at 350°F for 45 to 50 minutes, until the top is lightly golden and the center is set but still moist.
  6. Let the casserole rest for about 5 to 10 minutes before serving. This short cooling period allows it to firm up so each scoop holds together while remaining soft and creamy.

Notes

Drain the whole-kernel corn thoroughly to prevent excess liquid, while leaving the cream-style corn undrained. For extra browning, dot the top with a little additional butter or add shredded cheddar during the last 10 minutes of baking. Optional additions include cheese, sugar, green chiles, or bacon, but the standard recipe needs none of them.
