- Line a baking sheet with parchment paper or a silicone baking mat.
- Place the blue candy melts in a microwave-safe bowl and microwave in 30-second intervals, stirring thoroughly after each interval, until smooth.
- Pour the melted blue coating onto the prepared baking sheet and spread it into an even layer about 1/4 inch thick.
- If using the optional white candy melts or white chocolate chips, melt them separately and drizzle them over the blue coating.
- Immediately scatter the broken mini chocolate-chip cookies and mini chocolate sandwich cookies across the wet surface.
- Add 20 to 30 candy eyes and press them gently into the coating so they stick.
- Refrigerate the tray for about 30 minutes, or until the bark is completely firm.
- Break or cut the firm bark into irregular pieces and serve.
Notes
Add all toppings while the blue coating is still wet. If the coating becomes too thick, stir in a small amount of vegetable shortening or paramount crystals; do not add water. Store finished bark in an airtight container in a cool, dry place or in the refrigerator if your kitchen is warm.
