Bright blue candy bark loaded with crunchy mini cookies and candy eyes makes a cheerful no-bake dessert for parties and family celebrations. Optional white chocolate drizzle adds extra contrast and sweetness.

  • 12 ounces Blue candy melts
  • 1/2 cup Mini chocolate-chip cookies, roughly broken
  • 1/2 cup Mini chocolate sandwich cookies, roughly broken
Optional Drizzle
  • 1-2 tablespoons White candy melts or white chocolate chips
Decoration
  • 20-30 pieces Candy eyes

Method
 

Step-by-Step
  1. Line a baking sheet with parchment paper or a silicone baking mat.
  2. Place the blue candy melts in a microwave-safe bowl and microwave in 30-second intervals, stirring thoroughly after each interval, until smooth.
  3. Pour the melted blue coating onto the prepared baking sheet and spread it into an even layer about 1/4 inch thick.
  4. If using the optional white candy melts or white chocolate chips, melt them separately and drizzle them over the blue coating.
  5. Immediately scatter the broken mini chocolate-chip cookies and mini chocolate sandwich cookies across the wet surface.
  6. Add 20 to 30 candy eyes and press them gently into the coating so they stick.
  7. Refrigerate the tray for about 30 minutes, or until the bark is completely firm.
  8. Break or cut the firm bark into irregular pieces and serve.

Notes

Add all toppings while the blue coating is still wet. If the coating becomes too thick, stir in a small amount of vegetable shortening or paramount crystals; do not add water. Store finished bark in an airtight container in a cool, dry place or in the refrigerator if your kitchen is warm.
