Easy Christmas Tree Sugar Cookies

Tender, buttery Christmas tree cut-out cookies decorated with green royal icing and festive sprinkles. This recipe makes approximately 24–36 cookies, depending on cutter size.

Ingredients
  

Sugar Cookie Dough
  • 1 cup (226 g) Unsalted butter, softened
  • 1 cup (200 g) Granulated sugar
  • 1 Large egg
  • 2 teaspoons Pure vanilla extract
  • 2 3/4 cups (345 g) All-purpose flour, plus more for rolling
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Fine salt
For Decorating
  • As needed Green gel food coloring
  • As needed Sprinkles, sanding sugar, or nonpareils
  • As needed Mini candies or edible star sprinkles, optional
Simple Royal Icing
  • 3 cups (360 g) Confectioners’ sugar, sifted
  • 2 tablespoons Meringue powder
  • 5–6 tablespoons Warm water
  • 1/2 teaspoon Vanilla extract, optional
  • As needed Green gel food coloring

Method
 

Step-by-Step
  1. Beat the softened butter and granulated sugar for 2–3 minutes, until light and creamy. Beat in the egg and vanilla extract.
  2. Whisk the flour, baking powder, and salt in a separate bowl. Gradually add the dry ingredients to the butter mixture and mix just until a soft dough forms.
  3. Divide the dough into two portions, flatten each portion into a disk, wrap, and refrigerate for at least 30 minutes. Chilling for 1 hour makes rolling especially easy.
  4. Heat the oven to 350°F (175°C) and line baking sheets with parchment paper. Roll the dough on a lightly floured surface to about 1/4 inch (6 mm) thick.
  5. Cut out Christmas tree shapes and transfer them to the prepared baking sheets, leaving about 1 inch between cookies. If the dough softens, briefly chill the cut shapes before baking.
  6. Bake for 10–12 minutes, until the edges are set and just beginning to turn pale golden. Cool the cookies on the baking sheet for 5 minutes, then move them to a rack to cool completely.
  7. Beat the sifted confectioners’ sugar, meringue powder, vanilla, and 5 tablespoons of warm water until smooth. Add the remaining water a few drops at a time until the icing is pipeable or spreadable, then tint it green.
  8. Decorate the completely cooled cookies with royal icing and add sprinkles, sanding sugar, nonpareils, mini candies, or edible stars while the icing is wet. Let the icing set for several hours before stacking or packaging.

Notes

Do not overmix the dough or overbake the cookies. For icing, use thicker consistency to outline and slightly thinner consistency to fill. Store fully set cookies in an airtight container with parchment between layers.
