- Heat the oven to 350°F (175°C) and grease a 9-by-13-inch baking dish.
- Blanch fresh broccoli florets in boiling water for about 2 minutes, then drain thoroughly. If using frozen broccoli, thaw it completely and squeeze or drain away excess water.
- In a large bowl, stir together the condensed soup, mayonnaise, lightly beaten egg, chopped onion, salt, pepper, and 1 cup of shredded cheddar.
- Fold the prepared broccoli into the sauce until every floret is evenly coated.
- Transfer the mixture to the greased baking dish and spread it into an even layer.
- Combine the crushed crackers with the melted butter. Sprinkle the crumb mixture over the casserole, followed by the remaining 1/2 cup cheddar.
- Bake uncovered for 30 to 35 minutes, until hot and bubbling and the topping is lightly browned. Let the casserole stand for 5 minutes before serving.
Notes
Drain broccoli very thoroughly so the sauce stays creamy rather than loose. For a crisper topping, add the cracker mixture during the final 15 to 20 minutes of baking, or loosely cover the dish with foil if the topping browns too quickly.
