  • 2 pounds Fresh broccoli florets, or about 6 cups frozen broccoli, thawed
  • 1 10.5-ounce can Condensed cream of mushroom soup
  • 1 cup Mayonnaise
  • 1 large Large egg, lightly beaten
  • 1/2 cup Finely chopped onion
  • 1 1/2 cups Shredded sharp cheddar cheese, divided
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
Topping
  • 1 cup Crushed buttery round crackers, such as Ritz
  • 4 tablespoons Butter, melted

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C) and grease a 9-by-13-inch baking dish.
  2. Blanch fresh broccoli florets in boiling water for about 2 minutes, then drain thoroughly. If using frozen broccoli, thaw it completely and squeeze or drain away excess water.
  3. In a large bowl, stir together the condensed soup, mayonnaise, lightly beaten egg, chopped onion, salt, pepper, and 1 cup of shredded cheddar.
  4. Fold the prepared broccoli into the sauce until every floret is evenly coated.
  5. Transfer the mixture to the greased baking dish and spread it into an even layer.
  6. Combine the crushed crackers with the melted butter. Sprinkle the crumb mixture over the casserole, followed by the remaining 1/2 cup cheddar.
  7. Bake uncovered for 30 to 35 minutes, until hot and bubbling and the topping is lightly browned. Let the casserole stand for 5 minutes before serving.

Notes

Drain broccoli very thoroughly so the sauce stays creamy rather than loose. For a crisper topping, add the cracker mixture during the final 15 to 20 minutes of baking, or loosely cover the dish with foil if the topping browns too quickly.
