Ingredients

Main Ingredients
  • 1 pound Bulk breakfast sausage
  • 1 30-ounce bag Frozen shredded hash browns, thawed
  • 2 cups Shredded sharp cheddar cheese
  • 10 eggs Large eggs
  • 2 cups Whole milk
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Black pepper
Optional Additions
  • 1/2 cup Diced onion or bell pepper

Method

Step-by-Step
  1. Heat the oven to 350°F and grease a 9-by-13-inch baking dish.
  2. Brown the sausage in a skillet over medium heat, breaking it into small pieces. If using diced onion or bell pepper, sauté it with the sausage, then drain excess fat.
  3. Spread the thawed hash browns evenly in the prepared baking dish.
  4. Scatter the cooked sausage over the potatoes, then sprinkle 1 1/2 cups of the shredded cheddar on top.
  5. Whisk the eggs, whole milk, kosher salt, and black pepper together until well combined. Pour the mixture evenly over the hash browns, sausage, and cheese.
  6. Sprinkle the remaining 1/2 cup cheese over the top.
  7. Bake uncovered for 45–55 minutes, until the center is set and the internal temperature reaches 160°F.
  8. Let the casserole rest for 5–10 minutes before slicing and serving.

Notes

Thaw and drain the hash browns thoroughly so excess water does not make the casserole soft or watery. For overnight preparation, assemble, cover, and refrigerate; let the dish sit at room temperature briefly before baking and expect to add roughly 10–15 minutes to the baking time.
