- Beat the softened cream cheese, powdered sugar, vanilla extract, and optional lemon zest or lemon juice until smooth.
- Gently mix the fresh blueberries with the optional granulated sugar and cornstarch without crushing the berries. If using approximately 1 cup of blueberry pie filling instead, omit the extra sugar and cornstarch.
- Lay one 7 x 7-inch egg-roll wrapper flat with one corner pointing toward you. Place about 2 tablespoons of cream cheese mixture across the lower third, then add 1–2 tablespoons of blueberries.
- Fold the bottom corner over the filling, fold in both side corners, and roll tightly toward the remaining corner. Brush the final corner with water and press firmly to seal, repeating with the remaining wrappers.
- Heat 2–3 inches of vegetable or canola oil to 350°F (175°C). Fry the egg rolls in small batches for approximately 2–3 minutes per side, turning once, until crisp and golden brown.
- Transfer the fried egg rolls to a paper-towel-lined rack or plate and cool for several minutes. Whisk the optional glaze ingredients until smooth, then drizzle it over the warm egg rolls before serving.
Notes
Keep the wrappers and prepared cream cheese filling cold enough to handle easily, but make sure the cream cheese is smooth rather than runny. Do not overfill or leave loose seals. Maintain the oil near 350°F because cooler oil can create greasy egg rolls, while hotter oil can brown the wrappers before the filling is warm. Blueberry pie filling may replace the fresh berries; use approximately 1 cup and omit the extra sugar and cornstarch.
