Easy Blueberry Cake with Lemon Glaze

Blueberry Cake
  • 1/2 cup (113 g) Unsalted butter, softened
  • 1 cup (200 g) Granulated sugar
  • 2 eggs Large eggs, room temperature
  • 1 teaspoon Vanilla extract
  • 1 lemon Finely grated lemon zest
  • 2 cups (240 g) All-purpose flour
  • 2 teaspoons Baking powder
  • 1/2 teaspoon Salt
  • 1/2 cup (120 ml) Milk
  • 2 cups (about 300 g) Fresh blueberries
Lemon Glaze
  • 1 cup (115–120 g) Confectioners’ sugar
  • 2 tablespoons (30 ml) Fresh lemon juice
  • 1/2 teaspoon Finely grated lemon zest, optional

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan, 9-inch springform pan, or 9-inch square pan, then line the bottom with parchment if desired.
  2. Whisk the flour, baking powder, and salt together in a medium bowl. For especially well-distributed berries, reserve 1 tablespoon of the measured flour for tossing with the blueberries.
  3. Beat the softened butter and granulated sugar for 2–3 minutes, until light and fluffy. Add the eggs one at a time, beating after each addition, then mix in the vanilla and lemon zest.
  4. Add the dry ingredients in two or three additions, alternating with the milk. Mix only until the ingredients are combined; the batter will be fairly thick.
  5. Toss the blueberries with 1 tablespoon of the measured flour, if using, and gently fold them into the batter. If using frozen blueberries, keep them frozen rather than thawing them.
  6. Spread the batter evenly in the prepared pan. Bake for approximately 40–50 minutes, until the top is golden and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  7. Cool the cake in the pan for 10–15 minutes, then transfer it to a wire rack. Allow it to cool completely before glazing.
  8. Whisk the confectioners’ sugar and lemon juice until smooth, adding the optional lemon zest if desired. Drizzle the glaze over the fully cooled cake and let it settle before slicing.

Notes

Do not glaze the cake while it is warm because the glaze will melt and become transparent. Add more confectioners’ sugar for a thicker glaze or lemon juice a few drops at a time for a thinner glaze. Store covered at room temperature for a day or refrigerate for longer storage.
