Fresh asparagus is roasted at high heat with olive oil, balsamic vinegar, garlic, salt, and pepper until tender-crisp. Parmesan and balsamic glaze make a delicious optional finish.

  • 1 pound Fresh asparagus
  • 1 1/2 to 2 tablespoons Extra-virgin olive oil
  • 1 tablespoon Balsamic vinegar
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Freshly ground black pepper
Optional Additions
  • 1 clove Garlic, minced
  • 2 tablespoons Grated Parmesan
Optional Finish
  • 1 to 2 tablespoons Balsamic glaze

Method
 

Step-by-Step
  1. Heat the oven to 425°F and line a baking sheet with parchment paper or foil if desired.
  2. Rinse the asparagus and dry it thoroughly. Snap or cut away the woody ends, generally removing 1 to 2 inches from the bottom.
  3. Arrange the asparagus in a single layer on the baking sheet. Toss with olive oil, balsamic vinegar, kosher salt, freshly ground black pepper, and minced garlic if using.
  4. Roast for 12 to 15 minutes, or until the asparagus is bright green and tender-crisp. Thin spears may finish in 8 to 10 minutes, while thick spears generally need the full 12 to 15 minutes.
  5. Sprinkle with Parmesan if desired and drizzle with balsamic glaze immediately before serving.

Notes

Dry the asparagus well so it roasts instead of steams. For a sweeter, more concentrated balsamic flavor, add the balsamic glaze after roasting. Refrigerate leftovers and reheat gently so the spears do not become mushy.
