- Pat the cod fillets dry with paper towels and arrange them in a single layer in the prepared dish.
- Whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, paprika, oregano, kosher salt, and black pepper.
- Spoon or brush the lemon Dijon mixture evenly over the cod fillets.
- Bake the cod uncovered for 12 to 15 minutes, checking thinner fillets around 10 to 12 minutes. The fish is ready when it flakes easily and reaches 145°F (63°C) in the thickest part.
- Garnish the baked cod with chopped fresh parsley and serve immediately with lemon wedges.
Notes
Patting the cod dry helps the sauce cling to the fish and keeps extra moisture from diluting the flavor. Since cod cooks quickly, begin checking thinner fillets around 10 to 12 minutes and remove the fish as soon as it reaches 145°F (63°C) to help prevent a dry texture.
