- Wash and thinly slice the English cucumbers. Thinly slice the red onion and chop the fresh dill.
- Lightly salt the cucumber slices and let them stand for 10–15 minutes. Drain or blot away excess liquid with paper towels.
- Whisk the vinegar, olive oil, honey or sugar, kosher salt, black pepper, and optional lemon juice or garlic in a small bowl.
- Combine the cucumbers, red onion, and dill in a large bowl. Pour over the dressing and toss gently until the vegetables are evenly coated.
- Refrigerate the salad for 20–30 minutes. Toss again just before serving, then add feta immediately before serving if desired.
Notes
English or Persian cucumbers work well because they have thin skins and fewer seeds. For the best texture, do not dress the salad much more than 20–30 minutes before serving, since cucumbers release liquid as they stand.
