Easy and Refreshing Healthy Cucumber Salad

A crisp, bright cucumber salad made with red onion, fresh dill, and a simple vinegar dressing. No cooking is required, and a short 20–30 minute rest gives the flavors time to develop.

Ingredients
  

Salad
  • 2 Large English cucumbers, thinly sliced
  • 1/2 Medium red onion, thinly sliced
  • 1/4–1/2 cup Fresh dill, chopped
Dressing
  • 1/4 cup White wine vinegar or rice vinegar
  • 1 tablespoon Extra-virgin olive oil
  • 1 teaspoon Honey, maple syrup, or granulated sugar
  • 1/2 teaspoon Kosher salt, plus more as needed
  • 1/4 teaspoon Freshly ground black pepper
Optional
  • 1 tablespoon Fresh lemon juice
  • 1 Small garlic clove, finely grated
Optional Garnish
  • As desired Crumbled feta cheese

Method
 

Step-by-Step
  1. Wash and thinly slice the English cucumbers. Thinly slice the red onion and chop the fresh dill.
  2. Lightly salt the cucumber slices and let them stand for 10–15 minutes. Drain or blot away excess liquid with paper towels.
  3. Whisk the vinegar, olive oil, honey or sugar, kosher salt, black pepper, and optional lemon juice or garlic in a small bowl.
  4. Combine the cucumbers, red onion, and dill in a large bowl. Pour over the dressing and toss gently until the vegetables are evenly coated.
  5. Refrigerate the salad for 20–30 minutes. Toss again just before serving, then add feta immediately before serving if desired.

Notes

English or Persian cucumbers work well because they have thin skins and fewer seeds. For the best texture, do not dress the salad much more than 20–30 minutes before serving, since cucumbers release liquid as they stand.
