Easy Air Fryer Roasted Mushrooms

Tender, savory mushrooms roast quickly in the air fryer with olive oil, garlic, herbs, salt, and pepper. Finish with parsley and Parmesan for an easy side dish that serves about four people.

  • 1 pound (450 g) Fresh mushrooms, preferably cremini or white button
  • 1 tablespoon Olive oil
Seasonings
  • 1 teaspoon Garlic powder or 2 minced garlic cloves
  • 1/2 teaspoon Italian seasoning or dried thyme
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Black pepper
Optional Garnishes
  • 1 tablespoon Chopped fresh parsley
  • 1 tablespoon Grated Parmesan

Step-by-Step
  1. Wipe the mushrooms clean with a damp paper towel, trim the stem ends, and cut large mushrooms in half. Small mushrooms may be left whole or halved, depending on their size.
  2. Pat the mushrooms thoroughly dry. Toss them with olive oil, garlic powder or minced garlic, Italian seasoning or thyme, kosher salt, and black pepper.
  3. Preheat the air fryer to 400°F (200°C) for about 3 minutes if your appliance requires preheating. Arrange the seasoned mushrooms in a single layer in the basket.
  4. Air-fry at 400°F (200°C) for 8–12 minutes, shaking the basket or stirring the mushrooms halfway through. Smaller mushrooms may finish in 7–9 minutes, while larger or crowded batches may need 12–15 minutes.
  5. Serve the mushrooms immediately with chopped fresh parsley and grated Parmesan if desired. Expect the mushrooms to release some liquid and reduce in size during cooking.

Notes

Dry mushrooms well and avoid overcrowding the basket. For extra savory flavor, add 1 teaspoon Worcestershire sauce or soy sauce before cooking. You can also replace part of the olive oil with 1 tablespoon melted butter, or finish the mushrooms with lemon juice, balsamic vinegar, fresh thyme, or Parmesan.
