- Hull the strawberries and slice most of them. Reserve a few pieces if you want extra visible chunks in the finished sauce.
- Add the strawberries, sugar, lemon juice, and salt to a small saucepan. Cook over medium heat, stirring occasionally, until the berries release their juices and begin to soften, about 3 minutes.
- Mash some of the softened strawberries with a fork or potato masher, leaving several pieces intact for texture.
- Simmer for another 2 minutes, or until the mixture is slightly thickened. Remove the saucepan from the heat and stir in the vanilla extract.
- Cool briefly before serving. The sauce thickens further as it cools.
Notes
Taste after cooking and adjust the sugar or lemon juice according to the berries' sweetness. For a thicker topping, stir together 1 tablespoon cornstarch and 1 tablespoon cold water, then add the slurry during the final 1–2 minutes of cooking. Refrigerate covered for up to 5 days, or cool completely and freeze for up to about 2 months.
