Easy 5-Minute Strawberry Sauce Recipe

A quick stovetop strawberry topping made with fresh berries, sugar, lemon juice, vanilla, and a pinch of salt. It makes about 1 1/2 cups and is delicious warm or chilled over breakfast and dessert favorites.

  • 1 pound (450–454 g) Fresh strawberries, hulled and sliced
  • 1/4 cup (50 g) Granulated sugar
  • 1 tablespoon Fresh lemon juice
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt

  1. Hull the strawberries and slice most of them. Reserve a few pieces if you want extra visible chunks in the finished sauce.
  2. Add the strawberries, sugar, lemon juice, and salt to a small saucepan. Cook over medium heat, stirring occasionally, until the berries release their juices and begin to soften, about 3 minutes.
  3. Mash some of the softened strawberries with a fork or potato masher, leaving several pieces intact for texture.
  4. Simmer for another 2 minutes, or until the mixture is slightly thickened. Remove the saucepan from the heat and stir in the vanilla extract.
  5. Cool briefly before serving. The sauce thickens further as it cools.

Notes

Taste after cooking and adjust the sugar or lemon juice according to the berries' sweetness. For a thicker topping, stir together 1 tablespoon cornstarch and 1 tablespoon cold water, then add the slurry during the final 1–2 minutes of cooking. Refrigerate covered for up to 5 days, or cool completely and freeze for up to about 2 months.
