- Heat the oven to 425°F (220°C). Pour the melted butter into a 9-by-13-inch metal or ceramic baking dish and spread it across the bottom.
- Combine the baking mix and sour cream in a large mixing bowl. Stir lightly; the mixture will be somewhat crumbly.
- Add the 7-Up and stir just until a soft, sticky dough forms. Do not overmix.
- Lightly dust a work surface with baking mix. Turn out the dough, gently pat it to about 1 inch thick, and cut rounds with a biscuit cutter.
- Place the cut biscuits directly on top of the melted butter in the baking dish.
- Bake for 12 to 15 minutes, until the biscuits are puffed and golden brown. Add a few extra minutes if the centers still look doughy.
Notes
Use a light touch when mixing and shaping so the biscuits stay tender. Make sure the melted butter covers the bottom of the baking dish before adding the dough; this creates the characteristic buttery, crisp underside.
