  • 4 cups Bisquick or another complete baking mix
  • 1 cup Full-fat sour cream
  • 1 cup 7-Up or another lemon-lime soda
  • 1/2 cup Butter, unsalted or salted, melted

Step-by-Step
  1. Heat the oven to 425°F (220°C). Pour the melted butter into a 9-by-13-inch metal or ceramic baking dish and spread it across the bottom.
  2. Combine the baking mix and sour cream in a large mixing bowl. Stir lightly; the mixture will be somewhat crumbly.
  3. Add the 7-Up and stir just until a soft, sticky dough forms. Do not overmix.
  4. Lightly dust a work surface with baking mix. Turn out the dough, gently pat it to about 1 inch thick, and cut rounds with a biscuit cutter.
  5. Place the cut biscuits directly on top of the melted butter in the baking dish.
  6. Bake for 12 to 15 minutes, until the biscuits are puffed and golden brown. Add a few extra minutes if the centers still look doughy.

Notes

Use a light touch when mixing and shaping so the biscuits stay tender. Make sure the melted butter covers the bottom of the baking dish before adding the dough; this creates the characteristic buttery, crisp underside.
