- Heat a large pot or Dutch oven over medium heat. Add the ground beef, chopped onion, and green bell pepper, then cook for about 5–7 minutes while breaking the beef into small pieces.
- Add the minced garlic and cook for 30–60 seconds, stirring constantly, until fragrant. Drain excess fat from the pot if necessary.
- Stir in the undrained diced tomatoes, tomato sauce, rinsed kidney beans, quartered pepperoni, oregano, basil, salt, and black pepper.
- Bring the chili to a boil, then reduce the heat. Simmer uncovered for 10–15 minutes, stirring occasionally.
- Ladle the hot chili into bowls and top each serving with shredded mozzarella. Let the bowls stand briefly so the cheese melts before serving.
Notes
Brown the beef and vegetables well before adding the tomatoes for fuller flavor and a less watery chili. Add the pepperoni during the simmer to retain better texture and avoid excessive grease. Refrigerate leftovers promptly and reheat gently on the stovetop or in the microwave.
