Biscuit Dough
  • 2 cups (250-260 g) All-purpose flour
  • 1 tablespoon Baking powder
  • 1 teaspoon Fine salt
  • 1 tablespoon Granulated sugar
  • 6 tablespoons (85 g) Cold unsalted butter, cut into small cubes
  • 3/4 cup (180 ml) Cold milk or buttermilk

Method
 

Step-by-Step
  1. Heat the oven to 450°F (230°C), then line a baking sheet with parchment paper or lightly grease it.
  2. Whisk together the flour, baking powder, salt, and sugar in a large bowl.
  3. Cut in the cold cubed butter with a pastry cutter or your fingertips until coarse crumbs form, leaving some pea-sized butter pieces.
  4. Pour in the cold milk or buttermilk and stir only until a shaggy dough forms. Do not overmix.
  5. Turn the dough onto a lightly floured surface, gently pat or fold it 3–4 times, and press it to about 3/4-inch thickness.
  6. Cut 8 rounds with a 2- to 2 1/2-inch biscuit cutter, pressing straight down without twisting.
  7. Arrange the biscuits close together for softer sides or spaced apart for crisper sides.
  8. Bake for 10–12 minutes, until puffed and lightly golden. Serve warm.

Notes

Keep the butter and liquid cold, and handle the dough as little as possible. Buttermilk gives the biscuits a slightly tangy flavor and tender texture. For taller biscuits, complete the gentle folds and place the cut biscuits close together before baking.
