Easy 15-Minute Fried Rice

  • 3 cups Cold, cooked white rice
  • 2 tablespoons Neutral cooking oil
  • 1 Small yellow onion, finely diced
  • 1 cup Frozen peas and carrots
  • 2 Garlic cloves, minced
  • 2 Large eggs, lightly beaten
Seasonings
  • 3 tablespoons Low-sodium soy sauce
  • 1 teaspoon Toasted sesame oil
  • 2 Green onions, thinly sliced
  • 1/4 teaspoon Ground black pepper
Optional Additions
  • 1 cup Diced cooked chicken, shrimp, pork, or ham
  • 1-2 teaspoons Fresh ginger, grated
  • 1 tablespoon Oyster sauce

Method
 

Step-by-Step
  1. Break up the cold rice with your fingers or a fork. Heat a large skillet or wok over medium-high to high heat, add 1 tablespoon oil, cook the beaten eggs until just set, then transfer them to a plate and break them into small pieces.
  2. Add the remaining tablespoon of oil to the hot pan. Stir-fry the onion for about 1 minute, add the frozen peas and carrots, and cook for 2-3 minutes.
  3. Add the garlic and cook for about 30 seconds, just until fragrant. Add the cold rice and stir-fry for 2-3 minutes, pressing out clumps and letting some grains touch the hot pan.
  4. Return the cooked egg to the pan. Add the soy sauce, toasted sesame oil, and black pepper, tossing until the rice is evenly seasoned and hot.
  5. Stir in the green onions, taste, and add more soy sauce only if needed. Serve immediately while the grains are hot and lightly toasted.

Notes

Day-old rice gives the best texture. If using fresh rice, spread it on a baking sheet and refrigerate it uncovered for at least 30-60 minutes before frying. Avoid overcrowding the pan; cook in two rounds for a larger batch.
