  • 1 1/2-2 pounds Fresh carrots, peeled and sliced into coins or sticks
  • 2 tablespoons Butter
  • 1 tablespoon Fresh dill, chopped
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1-2 tablespoons Water, only as needed for steaming

Method
 

Step-by-Step
  1. Peel the carrots and cut them into evenly sized coins or sticks.
  2. Place the carrots in a saucepan or steamer with 1–2 tablespoons of water if needed. Cover and cook over medium heat for 8–12 minutes, until crisp-tender.
  3. Drain the carrots thoroughly, then return them to the hot pan.
  4. Add the butter, chopped fresh dill, salt, and black pepper. Toss until the butter melts and coats the carrots.
  5. Taste, adjust the seasoning if needed, and serve immediately.

Notes

For dried dill, substitute 1 teaspoon dried dill weed for 1 tablespoon fresh dill and add it with the butter so it can rehydrate. A small squeeze of lemon juice is an optional variation.
