- Heat the oven to 350°F (175°C). Grease and flour two 8 1/2-by-4 1/2-inch loaf pans, or line them with parchment paper.
- In a large bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon until evenly combined.
- Add the eggs, vegetable oil, granulated sugar, and vanilla to the same bowl. Stir until the mixture is combined and smooth enough to continue.
- Fold in the grated zucchini and optional chopped walnuts or pecans. Stir only until no dry streaks remain; do not overmix the batter.
- Divide the batter evenly between the prepared loaf pans and smooth the tops.
- Bake for 50 to 60 minutes, rotating the pans halfway through if needed. The bread is ready when a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Cool the loaves in their pans for 10 to 15 minutes. Transfer them to a wire rack and cool completely before slicing.
