  • 12 ounces wide egg noodles
  • 3 cups cooked turkey, chopped or shredded
  • 1 10.5-ounce can condensed cream of mushroom soup
  • 1 cup sour cream
  • 1/2 cup milk
  • 1 cup frozen peas, thawed
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped celery
Seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Topping
  • 1 cup shredded cheddar cheese, divided
  • 2 tablespoons butter, melted
  • 1/2 cup dry breadcrumbs or panko

Step-by-Step
  1. Heat the oven to 350°F (175°C) and grease a 9-by-13-inch baking dish.
  2. Cook the egg noodles in salted water until just shy of al dente, usually 1–2 minutes less than the package directions. Drain them well.
  3. In a large bowl, combine the condensed cream of mushroom soup, sour cream, milk, garlic powder, salt, and black pepper.
  4. Stir in the turkey, thawed peas, onion, celery, cooked noodles, and 1/2 cup of the shredded cheddar cheese.
  5. Transfer the mixture to the prepared baking dish and spread it evenly.
  6. Sprinkle the remaining 1/2 cup cheddar over the top.
  7. Combine the melted butter and breadcrumbs or panko, then sprinkle the mixture over the casserole.
  8. Bake uncovered for 25–30 minutes, until the casserole is hot and bubbling and the topping is lightly browned.
  9. Let the casserole rest for 5–10 minutes before serving so the sauce can settle and each portion holds together.

Notes

Use a mixture of turkey breast and dark meat for the most flavorful, moist result. If the turkey is especially dry, increase the milk to 3/4 cup or add a few tablespoons of broth. Store leftovers covered in the refrigerator and reheat gently until hot.
