- Heat the oven to 350°F (175°C) and grease a 9-by-13-inch baking dish.
- Cook the egg noodles in salted water until just shy of al dente, usually 1–2 minutes less than the package directions. Drain them well.
- In a large bowl, combine the condensed cream of mushroom soup, sour cream, milk, garlic powder, salt, and black pepper.
- Stir in the turkey, thawed peas, onion, celery, cooked noodles, and 1/2 cup of the shredded cheddar cheese.
- Transfer the mixture to the prepared baking dish and spread it evenly.
- Sprinkle the remaining 1/2 cup cheddar over the top.
- Combine the melted butter and breadcrumbs or panko, then sprinkle the mixture over the casserole.
- Bake uncovered for 25–30 minutes, until the casserole is hot and bubbling and the topping is lightly browned.
- Let the casserole rest for 5–10 minutes before serving so the sauce can settle and each portion holds together.
Notes
Use a mixture of turkey breast and dark meat for the most flavorful, moist result. If the turkey is especially dry, increase the milk to 3/4 cup or add a few tablespoons of broth. Store leftovers covered in the refrigerator and reheat gently until hot.
