- Trim any excess fat from the chicken breasts and place them in the slow-cooker insert. Arrange the sliced portobello mushrooms around and over the chicken.
- In a bowl, stir together the condensed cream of mushroom soup, dry Italian salad-dressing seasoning mix, and the optional chicken broth or water. Spoon this mixture evenly over the chicken and mushrooms.
- Cover and cook on LOW for 4–6 hours, or use HIGH for approximately 2–3 hours. Continue until the chicken is tender and reaches an internal temperature of 165°F, taking care not to cook it substantially beyond doneness.
- During the final 20–30 minutes, cut the softened cream cheese into cubes and add it to the slow cooker. Cover again and cook until the cream cheese melts into the sauce.
- Stir the sauce until smooth, then serve the chicken and mushrooms over cooked rice, egg noodles, or mashed potatoes. Spoon plenty of the creamy sauce over each portion.
Notes
Use plain, chive-and-onion, or garden-vegetable cream cheese. Thickly slice fresh mushrooms for better texture, avoid opening the lid repeatedly, and add the cream cheese near the end so it blends smoothly and is less likely to separate. Refrigerate leftovers promptly and reheat gently.
