Crazy Tender Slow Cooker French Dip Sandwiches

Tender slow-cooked chuck roast is shredded and piled onto toasted rolls with melted provolone, then served with strained cooking liquid for dipping.

Ingredients
  

Beef and Au Jus
  • 1 3 to 4-pound roast Beef chuck roast, trimmed
  • 1 large onion Large yellow onion, thinly sliced
  • 4 cloves Garlic, minced
  • 2 cups Low-sodium beef broth
  • 1/4 cup Low-sodium soy sauce
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 1 teaspoon Dried oregano
  • 1 leaf Bay leaf
  • 1 teaspoon, or to taste Kosher salt
  • 1/2 teaspoon Black pepper
  • 1 tablespoon Olive oil
For Serving
  • 6 rolls French rolls, hoagie rolls, or crusty baguette portions
  • 6 to 12 slices Provolone cheese

Method
 

Step-by-Step
  1. Pat the chuck roast dry with paper towels and season it with the kosher salt and black pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Brown the roast on all sides for about 8 to 10 minutes total.
  3. Place the sliced onion and minced garlic in the slow cooker, then set the browned roast on top.
  4. Whisk together the beef broth, soy sauce, Worcestershire sauce, thyme, rosemary, oregano, salt, and pepper. Pour the mixture over the roast and add the bay leaf.
  5. Cover and cook on LOW for 8 to 10 hours, or on HIGH for approximately 4 to 6 hours, until the beef is very tender and pulls apart easily with a fork.
  6. Transfer the roast to a plate and shred it while hot, discarding large pieces of fat. Strain the cooking liquid if you prefer a clearer au jus, then taste and adjust the seasoning.
  7. Return the shredded beef briefly to some of the cooking liquid so it stays juicy. Fill the rolls with beef and provolone, then broil for 3 to 5 minutes until the cheese melts and the bread is lightly toasted.
  8. Serve each sandwich with a cup or small bowl of the hot reserved au jus for dipping.

Notes

Chuck roast is the best choice because its connective tissue breaks down during the long cooking time. Browning is optional but adds deeper flavor. Watch the sandwiches closely under the broiler so the rolls do not burn.
