Step-by-Step
  1. Heat the oven to 350°F (175°C) and grease a 13 x 9-inch baking pan.
  2. Beat the softened butter, packed light brown sugar, and granulated sugar for 3 to 5 minutes, until light and fluffy.
  3. Beat in the eggs one at a time, then mix in the vanilla extract.
  4. Whisk the flour, baking soda, and salt together in a separate bowl. Gradually add this mixture to the butter mixture, mixing just until combined.
  5. Stir in the quick-cooking oats and semisweet chocolate chips until evenly distributed.
  6. Press or spread the dough evenly into the prepared pan.
  7. Bake for 15 to 20 minutes, until the edges are lightly golden and the center is set but still soft.
  8. Cool the pan on a rack before cutting into bars.

Notes

Use quick-cooking oats for the intended chewy, compact texture. Do not overbake; the bars continue cooking as they cool. Cool completely for the cleanest cuts, and substitute milk or dark chocolate chips if desired.
