- Heat the oven to 325°F and line baking sheets with parchment paper.
- Melt the chopped semisweet chocolate in a heatproof bowl set over, but not touching, a saucepan of gently simmering water. Stir until smooth and let it cool slightly.
- Whisk the flour, cocoa powder, baking powder, and salt together in a medium bowl.
- Beat the softened butter and granulated sugar for 2 to 3 minutes, until light and fluffy.
- Beat in the eggs one at a time, then mix in the vanilla and slightly cooled melted chocolate.
- Add the dry ingredients and mix just until combined. Fold in the crushed candy canes.
- If the dough is too soft to scoop cleanly, chill it for about 30 minutes.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 12 to 15 minutes, until the edges are set and the centers still look slightly soft.
- Cool the cookies on the baking sheet for 5 minutes, then transfer them to a wire rack.
Notes
Do not overbake; the centers finish setting as the cookies cool. Crush the candy canes into a mixture of fine powder and small pieces for even peppermint flavor. Store cooled cookies in an airtight container.
