- Cut the white American cheese into small, even cubes so it melts quickly and uniformly.
- Place the cheese, milk or half-and-half, butter, cumin, and garlic powder in a saucepan over low heat. Stir constantly until the cheese is nearly melted and smooth, taking care not to let the mixture boil.
- Stir in the undrained diced green chiles and optional pickled jalapeƱos. Continue stirring until the chiles are evenly distributed and the queso is hot.
- Add water one tablespoon at a time until the queso reaches a smooth, spoonable dipping consistency.
- Taste the queso and add salt only if needed. Stir in the optional cilantro just before serving.
- Serve immediately with tortilla chips. Keep the dip warm over very low heat or in a small slow cooker, stirring occasionally.
Notes
Use low heat throughout because high heat can cause the cheese to separate, become oily, or turn grainy. If the queso thickens while sitting, stir in a splash of warm milk or water.
