Step-by-Step
  1. Add the mayonnaise, apple cider vinegar, lemon juice, prepared horseradish, Dijon mustard, and Worcestershire sauce to a medium mixing bowl.
  2. Whisk in the garlic powder, onion powder, kosher salt, freshly ground black pepper, and optional cayenne pepper until the sauce is smooth and evenly seasoned.
  3. Taste the sauce and adjust it as needed. Add more vinegar or lemon juice for extra tang, more mayonnaise to mellow it, or a little sugar if the flavor is too sharp.
  4. Cover the bowl and refrigerate the sauce for at least 30 minutes. Resting it for one hour or overnight gives the flavors more time to blend.
  5. Stir the chilled sauce before serving. Brush or spoon it over grilled or smoked chicken near the end of cooking, or serve it in a bowl as a dipping sauce.

Notes

This recipe makes about 1 1/2 cups, depending on the brand and thickness of the mayonnaise. For a thinner sauce, whisk in 1 to 2 tablespoons of water or additional vinegar. Store covered in the refrigerator for up to about 1 week, following the freshness date of the mayonnaise and other ingredients.
