- Stir the peanut butter, sugar, and egg together in a bowl until evenly combined and a soft dough forms.
- Scoop approximately 1 tablespoon of dough for each cookie, roll into balls, and arrange about 2 inches apart on the prepared baking sheet.
- Flatten each dough ball with a fork, creating a classic crisscross pattern.
- Bake for about 10 minutes, or until the edges are set while the centers still look slightly soft.
- Cool the cookies on the baking sheet for several minutes before transferring them to a rack. They will firm as they cool.
Notes
Use conventional creamy peanut butter rather than very oily natural peanut butter for the most reliable dough. Do not overbake; the centers should be just set for a soft, chewy texture. If the dough seems too soft, chill it for 15-20 minutes before scooping.
