  1. Heat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Stir the peanut butter, sugar, and egg together in a bowl until evenly combined and a soft dough forms.
  3. Scoop approximately 1 tablespoon of dough for each cookie, roll into balls, and arrange about 2 inches apart on the prepared baking sheet.
  4. Flatten each dough ball with a fork, creating a classic crisscross pattern.
  5. Bake for about 10 minutes, or until the edges are set while the centers still look slightly soft.
  6. Cool the cookies on the baking sheet for several minutes before transferring them to a rack. They will firm as they cool.

Notes

Use conventional creamy peanut butter rather than very oily natural peanut butter for the most reliable dough. Do not overbake; the centers should be just set for a soft, chewy texture. If the dough seems too soft, chill it for 15-20 minutes before scooping.
