3-Ingredient Apple Pie Cups

Quick individual apple pies made with refrigerated pie crusts, canned apple pie filling, and beaten egg. The open-faced cups are golden, flaky, and ready in about 35–45 minutes.

  • 2 crusts, about 14–15 ounces each Refrigerated 9-inch pie crusts
  • 1 20–21-ounce can Apple pie filling
  • 1 beaten, for brushing Large egg

Method
 

Step-by-Step
  1. Heat the oven to 425°F and lightly grease a standard 12-cup muffin pan. Unroll the refrigerated pie crusts on a lightly floured work surface if needed.
  2. Cut twelve rounds approximately 3½ inches in diameter from the pie crusts. If the dough becomes soft, chill the rounds for a few minutes so they are easier to handle and less likely to shrink.
  3. Press one dough round into each muffin cup, keeping the pastry edges slightly above the rim. Chop any large apple pieces in the canned filling, then spoon roughly 2 tablespoons into each crust without overfilling.
  4. Brush the exposed pastry edges with the beaten egg. Bake for 15–20 minutes, until the crusts are golden brown and the filling is hot and bubbling.
  5. Let the apple pie cups cool in the muffin pan for about 10 minutes before removing them. The filling thickens as it stands, and the pastry becomes less fragile.

Notes

Chop large apple pieces before filling the cups for easier eating and a better fit. Cinnamon is not required because canned apple pie filling usually contains sugar and spices. Cool the cups before removing them to help prevent breakage.
