- Place the chicken and water in a large Dutch oven or soup pot. Bring the water to a boil, skimming foam from the surface as it rises.
- Reduce the heat, cover the pot, and simmer for about 1 1/2 hours, or until the chicken is tender and cooked through.
- Remove the chicken and let it cool until it is easy to handle. Strain the broth if you prefer a clearer, more polished soup.
- Remove and discard the chicken skin and bones. Cut or shred the chicken into bite-size pieces.
- Return the broth to the pot and add the onion, celery, carrots, salt, black pepper, poultry seasoning, and dried thyme. Simmer for about 15 to 20 minutes, until the vegetables are nearly tender.
- Add the fine egg noodles and chicken. Cook for about 6 to 8 minutes, or according to the noodle package directions, until the noodles are tender.
- Stir in the minced fresh parsley and serve the soup hot.
Notes
Skim the broth during the first boil and strain it after cooking for a cleaner soup. Add the noodles near the end because fine egg noodles can become soft and absorb too much broth. If preparing the soup ahead, cook the noodles separately and add them to each serving.
