- Combine the turmeric, cumin, kosher salt, and black pepper in a small bowl. Toss the chicken pieces with about half of the spice mixture, making sure the seasoning coats the chicken evenly.
- Heat the olive oil in a large nonstick skillet over medium-high heat. Add the chicken and cook for approximately 3 to 4 minutes, turning occasionally, until lightly browned; transfer it to a plate before it is fully cooked.
- Add the chopped onion to the same skillet and cook for 3 to 5 minutes, stirring occasionally, until softened. Add the garlic, ginger, and remaining spice mixture, then stir constantly for about 30 seconds.
- Pour in the diced tomatoes and chicken broth. Scrape the browned bits from the bottom of the skillet so they blend into the sauce.
- Return the chicken and any accumulated juices to the skillet. Reduce the heat to medium-low, cover, and simmer for 10 to 15 minutes, until the chicken reaches 165°F (74°C) internally and the sauce has slightly reduced.
- Remove the lid and check the sauce consistency. Garnish the chicken with chopped cilantro or parsley and serve with lemon wedges if desired.
Notes
Brown the chicken in batches if the skillet is crowded. For fresh turmeric, substitute approximately 1 tablespoon finely grated fresh turmeric for 1 teaspoon ground turmeric, and wear gloves because turmeric stains readily.
