- Whisk the sugar-free fat-free instant vanilla pudding mix with 2 cups cold skim milk for about 2 minutes, until the mixture thickens.
- Gently fold approximately half of the thawed whipped topping into the pudding. Mix just until combined so the filling stays light and airy.
- Place half of the angel food cake cubes in the bottom of a trifle bowl or deep glass serving dish.
- Add about half of the sliced strawberries and blueberries over the cake. Add the optional raspberries or blackberries if using.
- Spread half of the pudding mixture over the fruit, gently smoothing it toward the sides of the bowl.
- Repeat the layers with the remaining angel food cake, fruit, and pudding mixture.
- Finish with the remaining whipped topping and garnish with a few whole berries and mint leaves.
- Cover and refrigerate for at least 1 hour before serving. Chilling allows the cake to soften and gives the layers time to set.
Notes
For a firmer filling, refrigerate the prepared pudding for 5–10 minutes before folding in the whipped topping. Gently blot very juicy berries before layering, and assemble no more than several hours before serving for the best texture. Add the final berries just before serving for the freshest appearance.
