  • 1 medium Medium apple, peeled, cored, and diced small

  • 1 teaspoon Dried sage
  • 1/2 teaspoon Dried thyme
  • 1/4 teaspoon Black pepper
  • 8 cups Whole-wheat or light sandwich bread, cubed
Broth and Garnish
  • 1 1/2 to 2 cups Reduced-sodium chicken broth
  • 2 tablespoons Fresh parsley, chopped

Step-by-Step
  1. Heat the oven to 350°F and lightly coat a 9-by-13-inch baking dish with cooking spray. If the bread is fresh, spread the cubes on a baking sheet and toast for about 10 minutes, until slightly dry, then transfer them to a large bowl.
  2. Heat the olive oil in a large skillet over medium heat. Add the turkey sausage and cook for 5 to 7 minutes, breaking it into small pieces, until no pink remains.
  3. Add the onion, celery, carrot, and apple to the skillet. Cook for 6 to 8 minutes, stirring occasionally, until the vegetables begin to soften.
  4. Stir in the dried sage, dried thyme, and black pepper. Cook for about 30 seconds so the herbs become fragrant without scorching.
  5. Add the sausage mixture to the bread cubes. Pour in 1 1/2 cups of broth and toss gently, then add more broth a few tablespoons at a time until the bread is moist and cohesive but not wet.
  6. Stir in the chopped parsley and transfer the stuffing to the prepared baking dish. Cover the dish loosely with foil and bake for 25 minutes.
  7. Remove the foil and bake for another 10 to 15 minutes, until the stuffing is heated through and lightly browned on top. Let it stand for 5 to 10 minutes before serving.

Notes

Dry bread absorbs broth more evenly and helps prevent gummy stuffing. Add the broth gradually, since the exact amount depends on how dry the bread is. For the lowest practical points value, choose extra-lean turkey sausage, reduced-sodium broth, and cooking spray instead of additional oil.
