  1. Thaw the frozen hash browns completely, then drain or blot away excess moisture. Preheat the oven to 350°F (175°C), and lightly coat a 9-by-13-inch baking dish with cooking spray.
  2. In a large bowl, stir together the reduced-fat cream of chicken soup, fat-free sour cream, chopped onion, salt, black pepper, and about 3/4 cup of the shredded cheddar cheese.
  3. Fold the thawed hash browns into the soup mixture until the potatoes are evenly coated. Spread the mixture into the prepared baking dish and smooth the top.
  4. Sprinkle the remaining 1/4 cup cheddar over the casserole. Bake uncovered for 45–55 minutes, until hot and bubbling with lightly browned edges.
  5. Let the casserole stand for 5–10 minutes before serving. This short rest helps the creamy filling settle so each portion is easier to scoop.

Notes
