Weight Watchers Peanut Butter Parfait

A quick, creamy parfait made with nonfat vanilla Greek yogurt, peanut butter, banana, honey, and low-fat granola. This recipe makes two portions and takes about 10 minutes of active preparation.

  • 1 cup Nonfat vanilla Greek yogurt
  • 2 tablespoons Creamy peanut butter
  • 1 tablespoon Honey
  • 1 banana Medium ripe banana, sliced
  • 1/4 cup Low-fat granola
Optional Toppings
  • 2 tablespoons Chopped peanuts
  • To taste Ground cinnamon

Method
 

Step-by-Step
  1. Place the peanut butter and honey in a small bowl. Stir in 2 tablespoons of the yogurt until the mixture is smooth and loose enough to spoon.
  2. Divide half of the remaining yogurt between two glasses or dessert dishes.
  3. Add half of the banana slices and half of the peanut-butter mixture to the two dishes.
  4. Repeat the layers with the remaining yogurt, banana slices, and peanut-butter mixture.
  5. Top each parfait with the granola and optional chopped peanuts. Add a light sprinkle of ground cinnamon if desired.
  6. Serve immediately, or refrigerate for 15–30 minutes. If chilling, add the granola just before serving so it remains crisp.

Notes

Loosen the peanut butter with yogurt before layering to prevent dense clumps. For better Weight Watchers point control, use powdered peanut butter or reduce the regular peanut butter to 1 tablespoon total, and measure granola carefully.
