A warmly spiced chicken soup filled with vegetables, chickpeas, tomatoes, and couscous. This lighter dinner recipe makes about 6 servings and comes together in approximately 45–50 minutes.

  • 1 Medium onion, chopped
  • 2 Medium carrots, chopped
  • 2 Medium celery stalks, chopped
  • 2 Garlic cloves, minced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Ground coriander
  • 1/2 teaspoon Ground cinnamon
  • 1/4 teaspoon Cayenne pepper
  • 6 cups Reduced-sodium chicken broth
  • 1 14 1/2-ounce can Diced tomatoes with juices
  • 1 pound Boneless, skinless chicken breast, cut into approximately 1/2-inch pieces
  • 1 15-ounce can Chickpeas, rinsed and drained
  • 1/2 cup Uncooked couscous
Finishing Ingredient
  • 1/4 cup Fresh cilantro, chopped

Method
 

Step-by-Step
  1. Coat a large soup pot or Dutch oven with cooking spray. Add the chopped onion, carrots, and celery, then cook over medium heat for about 5 minutes, stirring occasionally, until the vegetables begin to soften.
  2. Add the minced garlic, cumin, paprika, coriander, cinnamon, and cayenne pepper. Stir and cook for about 30 seconds, just until the spices and garlic become fragrant.
  3. Pour in the reduced-sodium chicken broth and diced tomatoes with their juices. Bring the soup to a boil, reduce the heat, and simmer for about 10 minutes.
  4. Add the diced chicken and chickpeas. Simmer for 8–10 minutes, or until the chicken is fully cooked and reaches 165°F in the thickest pieces.
  5. Stir in the uncooked couscous. Cover the pot, remove it from the heat, and let it stand for about 5 minutes, until the couscous is tender.
  6. Stir in the chopped cilantro, taste, and adjust the seasoning if needed. Serve the soup hot.

Notes

Toast the spices briefly with the vegetables and garlic to deepen their flavor without adding extra fat. Add couscous at the end and avoid prolonged boiling because it can swell excessively and make the soup thick or mushy. Points vary by Weight Watchers program and ingredient brands.
