  • 1 English cucumber, about 10 oz English cucumber, chopped
  • 2 cups Cherry or grape tomatoes, halved

  • 1 15 oz can Chickpeas, drained and rinsed
  • 1/2 cup Pitted Kalamata olives, halved
  • 1/2 cup Reduced-fat feta cheese, crumbled
  • 1/4 cup Fresh parsley, chopped
  • 4 cups, optional Romaine lettuce, chopped
Dressing
  • 2 tablespoons Extra-virgin olive oil
  • 2 tablespoons Fresh lemon juice
  • 1 tablespoon Red-wine vinegar
  • 1 small clove Small garlic clove, minced
  • 1 teaspoon Dried oregano
  • 1/4 teaspoon, plus more to taste Kosher salt
  • 1/4 teaspoon Black pepper

Method
 

Step-by-Step
  1. Drain and rinse the chickpeas thoroughly, then prepare the vegetables by halving the tomatoes, chopping the cucumber and parsley, and slicing the onion and olives.
  2. Add the cucumber, tomatoes, red onion, chickpeas, olives, feta, parsley, and chopped romaine, if using, to a large serving bowl.
  3. Whisk the olive oil, lemon juice, red-wine vinegar, minced garlic, oregano, kosher salt, and black pepper in a small bowl or jar until combined.
  4. Pour the dressing over the salad and toss gently so the vegetables remain crisp and the feta does not break down too much.
  5. Serve immediately, or refrigerate the salad for 15 to 30 minutes so the flavors can blend. If making it ahead, add the feta and dressing shortly before serving.

Notes
