Ingredients

Crust
  • 1 cup Self-rising all-purpose flour
  • 1 cup Plain, nonfat Greek yogurt
  • as needed All-purpose flour for kneading and rolling
  • as needed Cooking spray or parchment paper
Toppings
  • 1/2 cup Marinara or pizza sauce
  • 1 cup Part-skim shredded mozzarella cheese
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon Garlic powder
Optional Toppings
  • 1/2 cup Sliced mushrooms, bell pepper, onion, or other vegetables
  • 2 ounces Thinly sliced turkey pepperoni or cooked lean chicken

Method

Step-by-Step
  1. Heat the oven to 425°F. Place a baking sheet or pizza stone inside while it preheats if you want a crisper bottom.
  2. Mix the self-rising flour and Greek yogurt in a bowl until a shaggy dough forms. Thick Greek yogurt works best because thinner yogurt can make the dough sticky.
  3. Transfer the dough to a lightly floured surface and knead for 2 to 3 minutes, adding only enough flour to prevent sticking. Let it rest for about 5 minutes.
  4. Roll or press the dough into one 12-inch crust, or divide it into four portions for 5- to 6-inch personal pizzas. Place the crust on parchment paper or a lightly sprayed baking sheet.
  5. Spread the sauce over the dough, leaving a narrow border. Sprinkle with Italian seasoning and garlic powder, then add dry vegetables or lean protein and finish with mozzarella.
  6. Bake for 12 to 16 minutes, until the crust is browned and the cheese is melted with light blistering. Rest for 2 to 3 minutes before slicing and serving.

Notes

Pat wet vegetables dry and keep sauce close to 1/2 cup for a 12-inch pizza. For extra crispness, bake the plain crust for 3 to 5 minutes before adding toppings. Recalculate SmartPoints or Freestyle values using the exact ingredients and serving count.
