Weight Watchers Citrus and Cranberry Ham

A fully cooked boneless ham is baked with a bright cranberry-orange glaze made from whole-berry cranberry sauce, orange marmalade, citrus juice, brown sugar, Dijon mustard, and orange zest. It makes approximately 8 to 10 servings and is ideal for a holiday meal.

  • 1 4-5 lb ham Fully cooked, lean, boneless ham
Citrus Cranberry Glaze
  • 1 cup Whole-berry cranberry sauce
  • 1/2 cup Orange marmalade
  • 1/4 cup Fresh orange juice
  • 2 tablespoons Packed light brown sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Finely grated orange zest
Optional Ingredients
  • 1 tablespoon Fresh lemon juice
Optional Garnish
  • As needed Orange slices or fresh cranberries

Method
 

Step-by-Step
  1. Preheat the oven to 325°F (165°C). Place the fully cooked ham cut-side down in a shallow roasting pan, and lightly score any visible fat in a diamond pattern.
  2. Stir together the cranberry sauce, orange marmalade, orange juice, brown sugar, Dijon mustard, and orange zest. Add the optional lemon juice if you prefer a sharper sweet-tart flavor.
  3. Spread approximately half of the glaze over the ham. Cover the roasting pan loosely with foil and bake for roughly 15 to 18 minutes per pound, until the center reaches about 140°F (60°C).
  4. Remove the foil during the final 20 to 30 minutes of cooking. Brush the ham several times with the remaining glaze so it becomes glossy and lightly caramelized without scorching.
  5. Remove the ham from the oven and let it rest for 10 to 15 minutes before slicing. Spoon any pan juices over the slices and garnish with orange slices or fresh cranberries if desired.

Notes

Do not overcook the ham because it is already fully cooked. Apply the final glaze near the end of baking because the cranberry sauce and marmalade contain sugar and can scorch if exposed to heat for the entire cooking time.
