Step-by-Step
- Heat the oven to 350°F (175°C) and line a 12-cup muffin pan with paper liners.
- Place one reduced-fat vanilla wafer in the bottom of each paper liner. Check that each cookie sits flat so it forms an even little crust.
- Beat the softened cream cheese and granulated sugar until smooth. Scrape down the bowl as needed, especially if using reduced-fat cream cheese.
- Add the egg and vanilla extract, then mix just until combined. Avoid overbeating, since excess air can cause the cheesecakes to puff and sink.
- Spoon the filling over the wafers, dividing it evenly among the cups and filling each about three-quarters full.
- Bake for 15–20 minutes, until the centers are set around the edges but still slightly soft in the middle.
- Let the bites cool in the muffin pan, then refrigerate them for at least 1 hour. Overnight chilling is preferable when you have time.
- Top each chilled cheesecake bite with about 1 tablespoon of light cherry pie filling just before serving.
Notes
Soften the cream cheese fully before mixing to prevent lumps. Chill the bites thoroughly before topping so the filling firms and the wafer crust is easier to handle. Weight Watchers Points vary according to the specific cream cheese, wafer, sugar, and cherry pie filling brands, so check current product labels and program guidance.
