  • 1/4 cup Mini semisweet chocolate chips

  1. Heat the oven to 350°F and lightly coat a 24-cup mini-muffin pan with cooking spray.
  2. Whisk the flour, unsweetened cocoa powder, baking powder, and salt together in a medium bowl.
  3. In a separate bowl, whisk the sugar, applesauce, canola oil, egg, and vanilla extract until smooth.
  4. Stir the dry ingredients into the wet mixture just until combined, taking care not to overmix. Fold in the mini semisweet chocolate chips.
  5. Use a small cookie scoop to divide the batter among the muffin cups, filling each about two-thirds full.
