- Rinse the quinoa thoroughly under cold water. Combine it with the water or low-sodium vegetable broth and 1/4 teaspoon salt in a saucepan.
- Bring the quinoa mixture to a boil, then reduce the heat to low and cover the saucepan. Simmer for 15 minutes, or until the liquid has been absorbed.
- Remove the saucepan from the heat and let the quinoa stand, covered, for 5 minutes. Fluff it with a fork and cool it to warm or room temperature before assembling the bowls.
- Whisk the olive oil, lime juice, honey or maple syrup, Dijon mustard, 1/2 teaspoon salt, and black pepper in a small bowl. Taste and adjust only if needed, keeping the dressing bright and balanced.
- Divide the greens, if using, among four bowls. Add the quinoa, watermelon, chickpeas, cucumber, avocado, feta, and mint in colorful sections or layers.
- Drizzle each bowl with the lime dressing immediately before serving. Serve cold or at room temperature.
Notes
Drain or briefly blot the watermelon so excess juice does not dilute the dressing or make the quinoa soggy. Keep the avocado and dressing separate until serving for the best color and texture. Store components separately when possible.
