  • 1/2 cup Crumbled feta cheese
  • 1/4 cup Fresh mint leaves, thinly sliced or torn
Lime juice
  • 2 tablespoons Fresh lime juice, about 1 lime
Dressing
  • 1 tablespoon Extra-virgin olive oil
  • 1 teaspoon Honey or agave syrup, optional
  • 1/4 teaspoon Kosher salt, plus more to taste
  • 1/8 teaspoon Freshly ground black pepper

Step-by-Step
  1. Cut the seedless watermelon into 1-inch cubes. If it is especially juicy, place it in a colander for a few minutes so excess liquid can drain away.
  2. Whisk together the fresh lime juice, extra-virgin olive oil, honey or agave if using, kosher salt, and freshly ground black pepper until combined.
  3. Add the watermelon, cubed avocado, crumbled feta, and sliced or torn mint leaves to a large bowl. Keep the avocado pieces as intact as possible while assembling.
  4. Pour the dressing over the salad and gently toss just until the ingredients are coated. Avoid vigorous mixing because it can break up the avocado and feta.
  5. Taste the salad and adjust the lime juice, salt, or pepper as needed. Serve immediately, or chill briefly before serving.

Notes

Use chilled watermelon and feta for the freshest flavor. Choose an avocado that is ripe but still firm, and add the avocado and dressing immediately before serving to help prevent browning and keep the avocado intact.
