- Cut the watermelon into 1-inch cubes and place it in a large bowl. If the melon is especially juicy, drain off excess liquid before continuing so the finished salad stays fresh rather than watery.
- Whisk the extra-virgin olive oil, fresh lime juice, kosher salt, and freshly ground black pepper together in a small bowl. Seasoning the dressing instead of the watermelon helps distribute the flavor evenly.
- Add the avocado, crumbled feta, fresh mint, and optional red onion to the bowl with the watermelon. Add the avocado shortly before serving to help preserve its color and shape.
- Pour the dressing over the ingredients and fold gently with a large spoon or rubber spatula. Stop mixing as soon as everything is lightly coated so the avocado and feta do not break apart.
- Taste the salad and adjust the lime juice, salt, or pepper if needed. Serve immediately, or chill for no more than about 10 minutes before serving.
Notes
Use chilled, ripe-but-firm watermelon and avocado. Fresh mint is preferred over dried mint. Cow's-milk feta is mild, while sheep's-milk feta has a sharper flavor. The salad is best served immediately and does not require cooking.
