- Heat the oven to 375°F (190°C) and lightly grease a small baking dish with approximately 1-quart capacity.
- Cook the bacon until crisp, drain it well, cool it slightly, and crumble it into small pieces. Reserve some bacon for the topping.
- Beat the softened cream cheese, sour cream, and mayonnaise together until smooth and creamy.
- Stir in the cheddar, mozzarella, most of the crumbled bacon, green onions, garlic, and black pepper. Add the Parmesan if using.
- Transfer the mixture to the prepared baking dish and spread it evenly. Sprinkle the reserved bacon and a little additional cheese over the top.
- Bake uncovered for 20–25 minutes, until the dip is hot, bubbling around the edges, and lightly browned.
- Let the dip rest for 5 minutes before serving so it thickens slightly while staying warm and scoopable.
Notes
Soften the cream cheese fully to avoid lumps. Do not overbake, since the mayonnaise-based mixture can separate. The dip may be assembled several hours ahead and refrigerated; add approximately 5–10 minutes to the baking time when baking directly from cold. Reserve bacon for the top just before serving for the best texture.
