Vibrant Rainbow Pasta Salad

A colorful chilled pasta salad packed with crisp vegetables, savory olives, creamy cheese, and a tangy homemade Italian-style dressing. Prepare it at least 30 minutes ahead so the flavors have time to mingle.

Ingredients
  

Pasta Salad
  • 12 ounces Tri-color rotini or fusilli
  • 1 cup Cherry tomatoes, halved
  • 1 small Small cucumber, diced
  • 1 small Red bell pepper, diced
  • 1 small Yellow bell pepper, diced
  • 1 cup Small broccoli florets
  • 1/2 small Red onion, thinly sliced or finely diced
  • 1/2 cup Black olives, sliced
  • 1/2 cup Crumbled feta cheese or small mozzarella balls
  • 2 tablespoons Fresh parsley, chopped, optional
Homemade Dressing
  • 1/2 cup Extra-virgin olive oil
  • 1/4 cup Red-wine vinegar
  • 1 tablespoon Fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Honey or sugar
  • 1 clove Garlic clove, finely grated or minced
  • 1 teaspoon Italian seasoning
  • 3/4 teaspoon Kosher salt
  • 1/4 teaspoon Freshly ground black pepper

Method
 

Step-by-Step
  1. Bring a large pot of salted water to a boil. Cook the tri-color rotini according to the package directions until al dente, usually 9–12 minutes.
  2. Drain the pasta and rinse it briefly under cold water to stop the cooking and cool it. Drain thoroughly so excess water does not thin the dressing.
  3. While the pasta cooks, prepare the vegetables and cheese. Halve the tomatoes, dice the cucumber and bell peppers, cut the broccoli into small florets, slice or dice the red onion, slice the olives, and chop the parsley if using.
  4. Whisk together the olive oil, red-wine vinegar, lemon juice, Dijon mustard, honey or sugar, garlic, Italian seasoning, kosher salt, and black pepper. You can also shake everything in a jar with a tight-fitting lid.
  5. Add the cooled pasta, tomatoes, cucumber, bell peppers, broccoli, onion, olives, and cheese to a large bowl. Pour in about three-quarters of the dressing and toss gently until the ingredients are evenly coated.
  6. Refrigerate the salad for at least 30 minutes before serving. Add the remaining dressing if the pasta has absorbed too much, then garnish with parsley.

Notes

Cook the pasta only to al dente because it will continue absorbing dressing while it chills. Reserve some dressing for just before serving. The salad can usually be refrigerated for up to 2 days. For a quicker option, replace the homemade dressing with 3/4 to 1 cup bottled Italian dressing.
