Veggie-Packed Freezer Breakfast Sandwiches Made Easy

Make eight freezer-friendly breakfast sandwiches with sheet-pan-style baked eggs, sautéed vegetables, English muffins, and cheese. They are easy to wrap, store, and reheat for busy mornings.

  • 8 Whole-wheat English muffins
Egg Bake
  • 8 Large eggs
  • 1/4 cup Milk
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Black pepper
Vegetables
  • 1 tablespoon Olive oil
  • 1/2 medium Yellow onion, finely diced
  • 1 medium Bell pepper, finely diced
  • 2 cups Baby spinach, roughly chopped
Assembly
  • 8 slices Cheddar, Monterey Jack, or Swiss cheese slices
Optional Additions
  • 8 patties or slices Cooked turkey-sausage patties or Canadian bacon
  • 1/2 teaspoon Garlic powder
  • 1 pinch Red-pepper flakes
  • 1/4 cup Chopped mushrooms

Method
 

Step-by-Step
  1. Heat the oven to 350°F. Lightly grease an 8-inch square or 9-inch round baking pan, or line the pan with parchment.
  2. Heat the olive oil in a skillet over medium heat. Cook the onion and bell pepper for 4–5 minutes, until softened, then add the spinach and cook for 1–2 minutes, until wilted.
  3. Whisk the eggs, milk, kosher salt, and black pepper in a bowl. Stir in the cooked vegetables after they have cooled briefly.
  4. Pour the egg mixture into the prepared pan and bake for about 15–20 minutes, until the center is set and no longer jiggles. Remove it as soon as it is set to prevent dry eggs.
  5. Cool the egg bake for several minutes, then cut it into 8 portions.
  6. Split and lightly toast the English muffins if desired. Place one egg portion and one cheese slice on each muffin, adding an optional turkey-sausage patty or slice of Canadian bacon if using.
  7. Cool the assembled sandwiches completely before wrapping each one in parchment or foil. Place the wrapped sandwiches in a freezer bag or airtight container and label the bag with the date.

Notes

Freeze for up to 2–3 months for best quality. From frozen, unwrap and microwave for about 1–2 minutes, turning once, until hot throughout. For a better-textured muffin, microwave until warmed and then toast briefly in a toaster oven or air fryer. Thawing overnight in the refrigerator generally reduces reheating time to about 45–90 seconds.
